- 8 Large Pork Sausages,
4 Baking Potatoes slice 1cm thick,
3 Sticks of Celery Diced,
1 Onion Sliced,
1 Clove of Garlic Crushed,
750ml Beef Stock, (a stock cube will be fine)
Sprig of Thyme,
Salt and Pepper.

This recipe is a great autumn dish, that would be perfect for one of those dark evenings! The dish serves 4 people generously but can easily be adapted to feed more hungry folks if needed! Finely slice the onions, and sweat down in a large oven proof dish. Once the onions are soft add the crushed garlic, celery and sprig of thyme, cook for another minute.
Add the sausages, and continue to cook until the sausages brown. Throw in the sliced potatoes, and pour over the hot beef stock, season generously with salt and pepper.
Bake in a preheated oven at 190◦c for an hour 30 minutes, until the potatoes have browned, and the sausages cooked.
Serve with your favourite vegetables, and a good dollop of Colmans mustard.
