Recipe: Rossi Ice cream honeycomb sundae

Colin Grey is the joint owner of the Rossi Ice Cream brand, along with his brother Mike. They sell to the business sector and since buying the company they’ve moved it forward commercially.
‘We found we needed to update systems and marketing to ensure the success of this iconic brand, says Colin.
‘The only hi tech equipment here was a fax machine. There was no barcoding and only a few contracts with retail outlets.

So we’ve updated the labelling and packaging and created a website.’ Since then they’ve also introduced new flavours including rhubarb and custard, rocky road and this month they’ve launched black vanilla ice cream!
They’ve also increased their reach beyond Essex, having just secured a contract with the Manchester Co-op group and also Haven holiday parks. Here Colin explains how to create a stunning, traditional ice cream sundae…
Ingredients:
Rossi Honeycomb Ice Cream
Honeycomb pieces
Chocolate sauce
Wafer
Whipped cream
Fresh strawberries
Method:
Take a sundae glass and drizzle the chocolate sauce around the inside. Place some honeycomb pieces into the glass. Scoop honeycomb ice cream into the glass and layer with honeycomb pieces, repeating the process until the glass is full. Finish with whipped cream, chocolate sauce, fresh strawberries and a wafer.
