Owner of French’s Farm Shop in South Weald, Malcolm Knox, shares his recipe for mediterranean chicken

Malcolm Knox owns French’s Farm Shop in South Weald and at this time of year he’s busy preparing fresh barbecue packs. ‘Our superb range of gluten free burgers and sausages are always popular. They have nothing added, just garlic seasoning and ground meat. We don’t use breadcrumbs to pad them out.’ On top of that they have plenty of chicken, lamb and pork kebabs, catering for every taste. ‘Our range of flavourings is phenomenal, with 100% pure chunks of meat, so you can see exactly what you are eating.’ If you prefer to cook indoors they can supply you with lamb chops and boneless rolled garlic chicken or, for those with fiery fervour, try the PiriPiri chicken. Here Malcolm shares his recipe for one of his favourite summer casseroles...

Mediterranean chicken (serves 4)

Ingredients

2-3 organic chicken thighs or drumsticks per person (skin on)

1 pint of good quality organic chicken stock

250g of plain flour

1 tbsp of smoked paprika

1 large onion (thinly diced)

2 cloves of garlic (crushed)

1 jar of Greek pitted black olives

Small jar of cooked artichokes

1 dozen small cherry tomatoes

1 whole red pepper (diced)

1 whole green pepper (diced)

Olive oil

Season to taste

Method

Mix the paprika and flour together then coat the chicken with the mixture individually. Using a large pan or wok, pour in enough olive oil to shallow fry the chicken until the skin is crisp and light brown. Then remove and set to one side.

Place the drained olives into a casserole dish together with the artichokes and the oil. Add to this the peppers, onions and garlic. Put the chicken on top of the ingredients and cover with the chicken stock. Then place the tomatoes on the top.

Cook in the oven on a medium heat for 1¼ hours. Do not cover as this will allow the flour to thicken the stock. Serve with new potatoes and a green vegetable, perhaps broccoli or beans, or rice – whatever is your preference!
