HOW often do you hear a man at a dinner table, hark back to his childhood days and describe the wonderful steamed puddings his mother used to make? In our house it's usually followed by his sharp exit from the already bustling kitchen, writes Stephanie Mackyntyre.

Today, our kitchens can be hives for homework cramming sessions, rapidly-typed emails, satellite TV and amid the chaos can be heard the occasional ding of the microwave. The days of spending hours covered in flour, making suet pastry and standing over a hot stove, cooking up steaming steak and kidney seem sadly long gone - but not at Hobbans Farm.

Based in Bobbingworth near Chipping Ongar, the farm is home to Mary Scales who after many years running the Chequers at Matching Green and cooking for her customers, found that the sweet and savoury traditional puddings were what her customers returned for again and again, sometimes from as far away as the USA.

'I find the men especially love the bacon and onion and steak and kidney puddings,' explains Mary. She also bakes sweet varieties, her most popular ones being coconut and jam, sticky toffee and the spotted dick varieties. Mary also tried her best to convince me that they are quite healthy too, as almost all of the suet is cooked out of the pudding in the steaming process.

'I have so much suet left over I'm considering making a range of bird seed cakes,' adds Mary with a smile. After all, these puddings were a large part of our grandparents' staple diets and they seemed to fair quite well.


At this time of the year it's comfort food we all crave and these puddings would certainly hit a warm spot for most. Mary prepares a special ginger and cranberry pudding for the festive season as well as gluten free and a traditional but lighter version of the Christmas pudding. These wonderfully nostalgic puddings are available in two sizes and sure to bring a warming feeling to the coming winter.
