Food producers: Lancasters Deli in Colchester

THE love of good food was the seed that has grown into a business for Paul Lancaster and wife Jemma. Together with his best man, Tope Ayandokun, who is now Paul's right-hand man in the business, the trio launched Lancaster's Deli.
THE love of good food was the seed that has grown into a business for Paul Lancaster and wife Jemma.
Together with his best man, Tope Ayandokun, who is now Paul's right-hand man in the business, the trio launched Lancaster's Deli in Colchester's Headgate building during the summer of 2008.
Paul's previous experience had always involved the very best food and wines, selling to establishments around East Anglia. With a firm business plan and the promise of finance from their local bank, they signed the lease on the premises.
Unfortunately for Paul, the credit crisis took its toll and the bank pulled out so they had to find in excess of 40,000 to launch. With sheer determination they made it and have been thriving ever since. Paul explains: 'Despite a difficult start I was determined to sell only the very finest produce.' Colchester's newest Deli may not be large, but there's a huge variety on offer.
Lancaster's is also extremely popular at lunchtimes for take-away jacket potatoes with all the fillings made by Paul on the premises each morning, plus panini's and sandwiches too.
Paul's dream is to eventually open a brasserie-style deli as his overriding passion is cooking. We may even see him on our screens this year as he's down to the last ten in Channel 4's Come Dine With Me. 'I love to create exciting flavours using the very best ingredients,' says Paul. 'We are just normal people who love great food.'
